Garlic Sesame Noodle Bowls

Ingredients


171 gm Buckwheat soba noodles, gluten-free, dry (or whole wheat pasta)
1/4 cup Tahini (for sauce)
1/4 cup Water (warm; for sauce)
3 tbsp Soy sauce, tamari (for sauce)
1 tbsp Sesame oil (for sauce)
1 tbsp Rice vinegar (for sauce)
1 clove(s) Garlic (grated; for sauce)
1/2 tsp Sriracha (or more to taste; for sauce)
2 cup Frozen edamame (soybeans) (thawed)
2 cucumber(s) Cucumber (diced)
227 gm Chicken breast, roasted (sliced)
2 tbsp Sesame seeds (optional; garnish)

Instructions


  1. Prepare noodles according to package directions until al dente. If your noodles seem very sticky, rinse them in cold water.
  2. While noodles are cooking, whisk all sauce ingredients together (or shake in a jar) until smooth.
  3. Toss noodles with about half of the sesame sauce.
  4.  Divide noodles, edamame, cucumber, and chicken into containers. Drizzle with a little extra sauce and sprinkle with sesame seeds. Eat hot or cold and store in the fridge for up to 4 days.

Notes:

Vegan

  • Substitute tofu for chicken for a vegan option.

Additions

  • Add extra veggies like boiled broccoli or Bok choy.

Cooking Chicken

  • Cut 1/2 pound of chicken breasts into bite-sized pieces, toss with olive oil, salt, pepper, and garlic powder, and bake at 425F for 10-15 minutes.
  • Save time and use pre-cooked chicken breasts or rotisserie chicken
