1 cup

Pumpkin purée, canned
|
3 large
|
Egg
(beaten)
|
1 tsp
|
Vanilla extract, pure
|
1 tsp
|
Cinnamon
|
1 tsp

Pumpkin pie spice

Instructions
- Crack 3 large eggs in a bowl and beat them well.
- Add 1 cup of pumpkin puree and mix with egg.
- Add vanilla and spices. stir until well mixed.
- Pour onto non stick pan for pancakes or into a waffle iron for waffles.
Top with your favorite greek yogurt or plant based yogurt, cinnamon and 1 tbsp of almond slices or pair with turkey or chicken sausage!
