1 1/2 cup | Bob's Red Mill Old Fashioned Rolled Oats; Gluten Free |
3 medium | Banana (s) (ripe; spotted) |
1 tsp | Baking powder ((optional)) |

Makes about 3-4 larger muffins or 6-8 mini muffins/muffin tops depending on the size of the muffin tin you're using.
INSTRUCTIONS:
- Mash 3 ripe bananas in a bowl until batter like.
- add 3 whole large eggs to the banana and beat until well mixed.
- add in any spices such as cinnamon, nutmeg.
- Add in baking powder if using (this is optional).
- add in the oats. MIX WELL until all oats are coated.
Let sit about 5-10 minutes to let the oats soften in the mixture.
- Spoon equal amounts into a muffin tin. Fill each cup about halfway for "muffin tops" or fill just below the top for fuller muffins.
BAKE
Bake at 375-degrees F for about 15-18 minutes until the tops are golden brown.
NOTES:
- You may use any type of oats you like, I find the Bob's Red Mill Quick Cooking oats are best for softer and less granola textures. If you like more granola/big oat textures, you can use rolled oats.
- You can put your oats in a blender to make a fine flour instead of using them whole if you like.
- Add in a scoop of your favorite protein powder if you like! Remember to put all recipe contents into your app if you are changing the recipe as it WILL change all nutritional information (calories, macros, micros).
