These light and fluffy pancakes are easy, quick and delicious!

Ingredients


1 cup Banana (s) (ripe to overripe)
2 large Egg
1 dash Baking powder

Instructions


  1. In a mixing bowl, whisk eggs and baking powder to combine.
  2. In another bowl, mash bananas lightly with a potato masher or a fork. There should still be some chunks of bananas to make fluffy pancakes.
  3. Pour the egg mixture into mashed bananas and stir to combine.
  4. Heat a frying pan over low-medium heat. Add 1-2 Tbsp batter to the pan. Once you see bubbles around the edges of the pancake, flip and cook for another minute.

  • Optional Toppings: 
    • Bananas, Blueberries, Raspberries, Strawberries, Apples
    • Grass-fed butter, Maple syrup, Honey, Coconut whip cream, Coconut butter
    • Slivered almonds, Nut/seed butter
  • For additional protein, add half a scoop of protein powder to the batter.
