1 cup | Bob's Red Mill Gluten Free Quick Cooking Oatmeal |
1 tbsp | Coconut oil |
4 date pitted | Medjool date |
1 tsp | Allspice, ground |
Recipe Yield: 6 servings Serving Size: 2 cookies
1. Combine all ingredients in a food processor or blender until well blended.
It will look like a thick and sticky dough.
2. Place dough in a bowl in the fridge for 10-15 minutes.
3. Spoon mixture on to a cookie sheet in small balls and flatten.
You can use cookie cutters to make it more fun!
4. Bake at 325-degrees Fahrenheit for 9-12 minutes.
Cookies will be a little hard but should not be dry and crumbly, otherwise, you cooked them too long!
NOTE:
- You may use 1 tbsp of maple syrup instead of dates.
- You may leave the oats whole instead of grinding in a blender for a more textured cookie
- Use your favorite frosting or nut butter on top to decorate!
