130 gm | Sweet potato (peeled and cooked) |
1/2 cup | Bob's Red Mill Gluten Free Quick Cooking Oatmeal |
3 tbsp | Dark chocolate chips |
Recipe Yield: About 8 cookies Serving Size: 2 Cookies
1. Peel and cook sweet potato until tender.
2. Place potato and oats in a blender or food processor, pulse until smooth like a batter.
3. Spoon mixture onto a non-stick cookie sheet.
4. Add 1 tbsp of chocolate chips to each cookie evenly.
5. Place in the oven and bake at 325-degrees Fahrenheit for 9-12 minutes.
Cookies will be soft but should not be completely mushy.
Let cool for about 10 minutes then enjoy.
NOTES:
- You may add 1-2 pitted dates or 1 tbsp of pure maple syrup for additional sweetness.
- Add a serving of your favorite protein powder to increase protein content.
