Make soft and fluffy tortillas by blending up this simple, four-ingredient batter.
Ingredients
1 cup

Almond flour/meal, Bob's Red Mill
|
1 cup
|
Tapioca starch
|
3/4 cup
|
Almond milk, unsweetened
|
2 medium
|
Egg
|
1/2 tsp
|
Sea Salt
|
1 tbsp
|
Coconut oil
(for cooking)

Instructions
- Add almond flour, tapioca starch, almond milk, egg, salt and cinnamon to a blender. Blend until smooth. You should be able to pour the batter.
- Lightly brush a skillet with coconut oil and heat over medium-high heat.
- Pour ¼ cup of the batter onto the heated skillet, and gently swirl the pan in circular motions so it spreads into a thin, round shape.
- Cook for 1-2 minutes, then flip. Cook for an additional minute or until golden brown.
- Repeat with remaining batter.
