Wash the strawberries and remove the stems. Slice in half.
Lay the strawberries out evenly over a sheet of parchment paper and place into the freezer overnight or for at least 4-5 hours.
Add the frozen strawberries, honey, Greek yogurt, and lemon juice to a food processor.Process until creamy, about 5 minutes. You many need to scrape down the sides.
If you find the strawberries are not fully blending, you can remove half and blend in batches and/or add a little water to help it along.
Test for sweetness, and add additional honey as needed.
Serve immediately or transfer to an airtight container and freeze for 2-3 hours for harder consistency.
