5-Ingredient Almond Butter Cup Energy Balls
Health Highlights
These almond butter cup energy balls are the perfect healthy treat that can be prepared with only 5 ingredients.

Ingredients

1 cup pitted Dates (soaked in warm water for 10 minutes)
2/3 cup Rolled oats- Gluten Free (Bob's Red Mill)
1/4 cup Dark chocolate chips, vegan
1 tbsp Chia seeds, ground
3 tbsp Almond butter

Instructions

1. Pulse dates in a food processor or blender until they are in small pieces and start to form into a ball.

2. Add gluten-free oats, chocolate, chia seeds and almond butter to the food processor and pulse or mix until combined. You want to see consistent, small pieces. It should not be overly processed and smooth.

3. Carefully roll into 1-inch balls (29-30 grams per ball), using the warmth of your hands to mould them together. You should get 14-15 balls. Set on a plate or a baking tray.

5. Enjoy as is or place in the fridge or freezer for 15 minutes to set. Energy balls will keep fresh in an air-tight bag or container for up to a week. Freeze for longer-term storage.

Notes:

Quick Tips:

For a nut-free version use a seed butter such as tahini, pumpkin or sunflower butter.
