1 cup Sweet potato (cooked, mashed and cooled oriental white sweet potato or purple sweet potato)
1/2 cup Arrowroot flour (approx.)
1/4 tsp Sea Salt (sea)

Instructions


  1. Cut uniform and boil or steam potatoes until tender (important that they are not under cooked or over cooked)
  2. Mash and cool thoroughly in fridge
  3. Combine the sweet potato, arrowroot starch and sea salt. Mix with hands until you have a pliable dough
  4. Spoon the dough onto parchment paper prepared baking sheet. Place the extra sheet of parchment on top of the dough or use extra arrowroot flour and use it to assist you in shaping the dough into desired sized circles.
  5. On one half of the circle, distribute the desired filling. Use the bottom piece of parchment paper to assist you in folding the other half of the dough on top of the filling to form the calzone. It will look like a half-circle.
  6. Use a fork and or the help of your fingers to gently seal the dough. Use pastry brush to brush top with ghee or coconut oil.
  7. Bake the calzones at 350 - 375 for 45 - 55 minutes until the edges are lightly golden brown. 

Notes:

*To make a larger amount of calzones I have found that 1- 5lb bag of sweet potato and 1 1/2 lbs of ground meat  and desired amount of veg makes approximately 12 calzones.
