Alcohol-Free Pineapple-Mint Margaritas

These pineapple-mint margarita mocktails are perfect for an afternoon with friends; in fact, they are so healthy you can even have them for breakfast!

Ingredients


1 1/2 cup Pineapple (frozen chunks)
1/4 cup Mint, fresh (leaves)
1 medium pepper(s) Jalapeno pepper (top and seeds removed)
2 tbsp Agave nectar (syrup)
3 tbsp Lemon juice (or lime juice; fresh)
1/2 cup Water (or more, to taste)
1 tsp Sea salt, fine (optional)

Instructions


  1. Add the pineapple, mint, jalapeno pepper, agave nectar, lemon juice, and water to a blender and blend until smooth.
  2. Wet the rim of the glass with a lemon wedge. 
  3. Pour the salt onto a small plate, then flip the glass upside down and rim the lip of the glass with salt.
  4. Serve the margarita mixture in the rimmed glass over ice and enjoy!
