All-purpose white flour
1 tsp
Baking soda
1 1/2 tsp

(reserve 1/2 tsp - see instructions)

These delicious and nutritious apple cinnamon muffins are the perfect treat for kids. Not only are they tasty and fun to make, but they offer a good source of fiber and vitamins. To make them, preheat the oven to 400° F and line a muffin tin with paper or silicone liners. Peel and cut the apple(s) into small pieces, then beat eggs in a large bowl. Add sugar, oil, water, and vanilla and mix well. In a separate bowl, combine flour, baking soda, and 1 teaspoon of cinnamon and stir the flour mixture into the egg mixture. The batter will be lumpy, so fold in the apple pieces to combine. Fill the muffin cups 3/4 full, then mix the remaining 1/2 teaspoon of cinnamon with 1 teaspoon of sugar and sprinkle it on top of the muffins. Bake them for 20 minutes or until lightly browned. Kids and adults alike will love these apple cinnamon muffins!

Peel and cut the apple(s) into small pieces.
Beat eggs in a large bowl. Add sugar, oil, water, and vanilla; mix well.
In a separate bowl, combine flour, baking soda, and 1 teaspoon of cinnamon.
Stir flour mixture into egg mixture. The batter will be lumpy.
Fold in apple pieces.
Fill muffin cups 3/4 full. Mix remaining 1/2 teaspoon cinnamon with 1 teaspoon sugar. Sprinkle on top of muffins.
