1/4 cup | Cranberries, dried |
2 tsp | Cinnamon |

1 1/2 cup | Almond milk, unsweetened |
1/4 cup | Maple syrup, pure |

1/4 cup | Coconut oil |
1 medium | Apple (thinly sliced) |
Preheat oven to 350F. Oil a 9x9'' baking tray with butter, oil or parchment paper. Set aside.
In a large bowl, stir together the rolled oats, walnuts, dried cranberries, cinnamon, and ginger.
In a separate bowl, add the almond milk, maple syrup, eggs and coconut oil. Whisk until well combined. Add the wet mixture to the bowl with dry ingredients and mix well.
Transfer the mixture to the baking tray. Layer apple slices on the oatmeal and press down on the surface gently with the back of a spoon.
Bake for 25-30 minutes or until a toothpick inserted into the center of the oatmeal comes out clean.
Let cool for 15 minutes then cut into squares and serve with desired toppings.
