Ingredients


3/4 block (12oz) Tofu, regular, extra firm (sliced in 10 even strips)
1 cup grated Carrots (peeled and ends trimmed)
1/2 cucumber(s) Cucumber (end trimmed, julienned)
3 tbsp Cilantro (coriander) (fresh; chopped)
2 tbsp Soy sauce
2 tbsp Rice wine vinegar
3 tbsp Peanut butter, powder
1/2 whole lime(s) Lime juice (fresh)
3 piece Rice paper

Instructions



  1. Julienne carrots and cucumber and chop the cilantro.
  2. Slice the tofu into even strips.
  3. Hydrate spring roll wrappers by adding them individually to a large bowl filled with very warm-hot water. Remove from water when fully pliable and place on plastic cutting board.
  4. Place tofu and veggies near the edge of the wrapper and roll up burrito-style.
  5. Create dipping sauce with 2 Tbsp soy sauce, 2 Tbsp rice wine vinegar, 3 Tbsp peanut butter powder.
