Avocado Toast with Eggs, Spinach and Tomatoes

1 tsp Extra virgin olive oil
1/2 tbsp chopped Shallots
1 cup Spinach
2 medium Egg
2 slice Bread, sprouted, whole grain, Ezekiel 4:9 (or gluten-free, if necessary)
1/4 avocado(s) Avocado
2 slice Tomato
1 pinch Himalayan sea salt
1 dash Black pepper

Instructions


  1. Heat oil in a skillet over medium heat. Add the shallot and spinach and cook until spinach is wilted. Transfer the cooked shallots and spinach to a small bowl and set aside.
  2. Next, fry up the eggs in the empty skillet until desired doneness is reached. Season with salt and pepper.
  3. Toast the bread.
  4. Mash the avocado with a fork and spread evenly on the toast.
  5. Top each piece of avocado toast with the spinach-shallot mixture, an egg, and a tomato slice.
  6. Season with salt and pepper, to taste, and enjoy immediately.

Notes:

Quick Tip:

To make this recipe Grain-Free, replace the bread slices with 2 thin slices of sweet potato, toasted in the toaster!
