114 gm Bacon, uncured, Nature's Choice (chopped)
171 gm Cabbage, savoy (shredded / cut into strips)
86 gm White mushrooms (sliced)
1 tsp Ghee
1 clove(s) Garlic (minced)
1/2 tbsp Tomato paste, organic
4 large Egg
1 tsp Salt and pepper
1 tsp Hot pepper (chili) flakes ((optional))

Instructions


  1. In a large skillet, fry the bacon for a few minutes then set to one side
  2. Using the same pan, add the ghee and sauté the chopped cabbage until it softens
  3. Add the sliced mushrooms, garlic, salt and pepper and tomato paste and continue cooking for a further 5-10 mins stirring frequently. Make sure nothing sticks to the bottom of the pan by adding a little water
  4. Stir the bacon back into the pan
  5. Make 4 wells for the eggs then crack the eggs into the pan being careful not to let the egg white spread too much
  6. Cover the pan with a lid and cook very gently until the eggs are cooked to your liking, about 4-6 minutes
  7. Serve up with the chilli flakes
