1) Preheat oven to 425 degrees F.
2) Place the halved avocado flesh side up in a small baking dish or tray. Scoop out about 1 tsp of the avocado to accommodate for the addition of an egg. Crack the egg into the cavity of the avocado. Top with salt and pepper.
3) Bake for 15 minutes or until the egg whites are cooked. Serve immediately.
