This easy kale that salad comes together with dried figs, pine nuts, nutritional yeast, and a balsamic vinaigrette. YUM!
Ingredients
1 bunch
Curly kale
(de-stemmed, washed, and chopped finely)
1/3 cup
Balsamic vinegar
1/4 cup
Extra virgin olive oil
5 fig
Figs, dried
(chopped; can sub with apricots or cranberries)
1/4 cup
Nutritional yeast
1 pinch
Himalayan sea salt
1 dash
Black pepper
1/4 cup
Pine nuts, dried
(can sub with chopped pecans or walnuts)
Instructions
Add chopped kale into a large bowl. Pour in olive oil and balsamic vinegar onto it. Using your hands, massage the kale for about one minute or until tender.
Add chopped figs, nutritional yeast, salt, pepper, and pine nuts. Mix well and serve!
