An easy recipe for maple glazed balsamic roasted vegetables.
Ingredients
2 cup
Zucchini
2 cup
Red bell pepper
(any color)
2 cup
Brussels sprouts
1 cup
Portobello mushroom
2 cup
Broccoli florets
1/4 cup
Olive Oil, Extra Virgin
1 tbsp
Maple syrup
2 tbsp
Balsamic vinegar
1/2 tsp
Salt
1/4 tsp
Garlic powder
Instructions
Preheat your oven to 400° F.
Wash and slice up vegetables that you like to roast totalling 8 cups of veggies. Those listed in the ingredients are good options! Root vegetables will take longer to cook if used. Cut vegetables smaller for faster cooking time.
Toss all the vegetables into a large 9 X 13- inch baking pan.
Mix the olive oil, balsamic vinaigrette, maple syrup, and garlic powder in a small container then pour the dressing over the veggies.
Stir well to coat the vegetables in the dressing.
Bake at 400° F (200° C) for a total of 45 minutes - taking it out of the oven and stirring the veggies every 15 minutes or halfway through cooking time.
Serve as a side dish with your favourite protein source.

Choose 8 cups of your favourite vegetables!
