1 large | Banana (s) |
1 tbsp | Peanut butter, smooth |
1 large | Egg |
1 1/2 tsp | Coconut flour |
1 tsp | Honey |
1/4 tsp | Vanilla extract, pure |
1 tbsp | Coconut oil |
Add all ingredients to a mixing bowl
Whisk until smooth - you can use an electric mixer if you want. My goal was to minimize cleanup
Melt half the butter (or coconut oil) in a frying pan or griddle over medium heat
Spoon silver dollar size pancakes into your pan. I usually do three at a time
Cook about three minutes - until top bubbles and edges look slightly done
Gently flip pancakes over. They should be golden brown on the bottom
Cook about two - three minutes until the other side is golden brown. You can tell when pancakes are done if you press gently on the top with a spatula and it springs back
Remove from pan and repeat with the rest of the batter
Top with whatever topping you like - honey, peanut butter, butter, fruit, etc
