Banting Cabbage and Mince [BR]

Ingredients


3 tbsp Butter, unsalted
500 gm Beef, ground
1 medium Yellow onion (chopped)
1 large pepper(s) Red bell pepper ((seeded and chopped))
3 clove(s) Garlic (chopped)
1 can(s) (28oz) Diced tomatoes, canned (or fresh tomatoes)
1/2 tsp Paprika (smoked)
1/2 tsp Oregano, dried
1 pinch Salt and pepper (to taste)
1 small head Green cabbage (cored and chopped)
2 cup, shredded Cheddar cheese

Instructions


  1. Saute beef, onion and sweet pepper in butter over medium/high in a large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
  2. Add garlic and saute 1 more minute.
  3. Stir in tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook 15-20 minutes or until cabbage is tender.
  4. Top with cheese, cover until melted then serve.
