1 medium Yellow onion
1 cup chopped Carrots
1/2 medium pepper(s) Red bell pepper (chopped)
1/2 medium pepper(s) Yellow bell pepper (chopped)
4 clove(s) Garlic (chopped)
1 tsp Extra virgin olive oil (or coconut oil)
2 can(s) (28oz) Diced tomatoes, canned
2 can(s) (15oz) Tomato sauce, canned
681 gm Beef, ground, extra lean
1 tbsp Chili powder
1 1/2 tbsp Cumin
1 pinch Salt and pepper
2 can (15oz) Black beans, canned (drained, rinsed)

Instructions


Saute onion, carrot, red/yellow pepper, garlic and olive oil until garlic is fragrant.

In another pan, lightly brown the ground beef. Add to sauteed vegetables.

Add diced tomatoes, tomato sauce, chili powder, cumin, and salt/pepper. Bring to a boil, lower heat and simmer for an hour.

Add in black beans during the last 15 minutes.
