16 peppercorn | Peppercorn (Cracked black peppercorns to taste) |

2 small potato(s) | Red potato (Peeled & Cubed) |
1 cup diced | Carrots (Peeled and cut into thick diagonal pieces) |

1 tsp | Beef liver (Liver paste for added iron (optional)) |

Marinate beef:
1. Marinate beef in a bowl with white vinegar, lime or lemon juice, soy sauce, curry powder, paprika, peppercorn, sea salt, crushed red pepper & garlic. Place bowl in fridge for 8 hours or overnight.
Stew:
2. Heat olive oil in a wok pan and cook beef cubes for a few minutes in medium heat. Add garlic and onions and sauté until slightly brown.
3. Add bone broth, pepper, bay leaf, sliced tomatoes, tomato sauce, tomato paste, cayenne pepper & stir.
4. Add red bell pepper, potatoes, carrots and green peas.
5. Add liver paste, one tbsp. at a time to your liking.
6. Cover and simmer for one hour on stovetop. Alternatively, simmer for 10 minute on stovetop and transfer to a crockpot. Cook on high for three hours until meat is tender.
7. Do a spoon test with sauce and see if anything needs to be added (ie. more tomato paste? Liver paste? Salt?). You can also add a bit of brown sugar to make the sauce less tangy.
8. Serve with rice if you’d like.
