Ingredients


1/2 kg Beef, stewing beef (Cut into bite size cubes)
2 tbsp Vinegar, white
2 tbsp Lime juice (fresh) ((Can sub Lemon juice))
1 tbsp Soy sauce
1/4 tsp Curry powder
1/4 tsp Paprika
16 peppercorn Peppercorn (Cracked black peppercorns to taste)
1/2 tsp Himalayan sea salt
1/2 tsp Crushed red pepper
2 clove(s) Garlic (Crushed)
2 tbsp Extra virgin olive oil
1 cup White onion (Finely chopped)
1 medium Heirloom tomatoes (Diced)
2 clove(s) Garlic (Crushed)
1 medium pepper(s) Red bell pepper ((can sub with green pepper) Cut into small strips)
1 cup Bone broth, Organic (Beef preferred)
2 tbsp Tomato paste, organic ((2-3 tbs))
1 cup Tomato sauce, canned
1 tsp Cayenne pepper ((To taste))
1 tsp Paprika
1 leaf Bay leaf
2 small potato(s) Red potato (Peeled & Cubed)
1 cup diced Carrots (Peeled and cut into thick diagonal pieces)
1/4 cup Frozen green peas
1 tsp Coconut sugar ((optional))
1 tsp Beef liver (Liver paste for added iron (optional))
1 pinch Salt and pepper ((To Taste))

Instructions


Marinate beef:

1.    Marinate beef in a bowl with white vinegar, lime or lemon juice, soy sauce, curry powder, paprika, peppercorn, sea salt, crushed red pepper & garlic. Place bowl in fridge for 8 hours or overnight. 

Stew:

2.    Heat olive oil in a wok pan and cook beef cubes for a few minutes in medium heat. Add garlic and onions and sauté until slightly brown. 

3.    Add bone broth, pepper, bay leaf, sliced tomatoes, tomato sauce, tomato paste, cayenne pepper & stir. 

4.    Add red bell pepper, potatoes, carrots and green peas.

5.    Add liver paste, one tbsp. at a time to your liking.

6.    Cover and simmer for one hour on stovetop. Alternatively, simmer for 10 minute on stovetop and transfer to a crockpot. Cook on high for three hours until meat is tender.

7.    Do a spoon test with sauce and see if anything needs to be added (ie. more tomato paste? Liver paste? Salt?). You can also add a bit of brown sugar to make the sauce less tangy.

8.    Serve with rice if you’d like.
