Ingredients


1 beet(s) Beets, boiled, drained (cooked (see notes))
1 cup Frozen blueberries (optional)
1/2 medium Frozen banana
1 cup Almond milk, unsweetened (or milk of choice (unsweetened))
1 piece, 1-inch Ginger root (peeled, fresh)
2 tbsp Almond butter (or ground flax, hemp or chia seeds)
5 scoop Collagen peptides (~ equivalent to 25 grams of protein from powder)
4 tbsp Chia seeds (ground flax or hemp)

Instructions


  1. In a blender, place the beet, blueberries, banana, milk, ginger, protein powder and almond butter. Blend on high speed for several minutes until smooth.
  2. For rushed mornings, this smoothie can be made the night before. Simply stir in the a.m. and sip.

Notes:

  1. If you have a high speed blender such as a Vitamix, you don't need to cook the beet. Using it raw preserves nutrients and will puree completely in the blender. Simply peel and quarter.
    1. Use your beet greens in stir-fires, pasta, pesto, or toss them right into your smoothie! The greens are chock full of inflammation-fighting nutrients.
  2. Three easy ways to cook your beets:
    1. Oven: wrap unpeeled, trimmed beets individually in foil and place on a rimmed baking sheet. Roast in the over at 350°F for 1 to 1 1/2 hours, depending on the size. Beets are done when a butter knife easily pierces through the center of each beet. Cook, peel and store in the fridge for up to 5 days.
    2. Stovetop: Place trimmed beets in a small pot, cover with water, and bring to a boil over high heat. reduce the heat to low and simmer until a butter knife easily pierces through the center of each beet, 25-35 minutes. Cool, peel, and store in the fridge for up to 5 days.
    3. Buy fresh (not canned) precooked beets at the grocery store (typically in the salad section).
