Mix together coconut milk, almond milk, maple syrup, and vanilla in a medium-sized bowl.
Whisk chia seeds to evenly distribute chia seeds in the milk mixture. Refrigerate for 2 hours to thicken. If clumps form, simply stir before layering with the berry sauce.
Berry Sauce:
Add berries and water to a saucepan and bring to boil.
Lower the heat and add in maple syrup, lemon juice, cinnamon, and sea salt.
Let cook for a few minutes until the sauce reduces slightly.
Remove from heat and puree with an immersion blender until smooth.
Assemble in large glasses, alternate layers of chia pudding with the Berry Sauce, starting with the pudding and ending with the sauce. Enjoy!
