2/3 cup | Sesame seeds, black |
1/2 cup | Walnuts |
2 tbsp | Flaxseed meal (ground) |
1/2 cup | Rice flour, brown |
8 medium | Jujube (Dried red dates, chopped) |
1/4 cup | Coconut oil |
1/3 cup | Maple syrup, pure |
1 large | Egg |
1 pinch | Himalayan sea salt |
Preheat oven to 325F. Line a baking tray with parchment paper.
Place the black sesame seeds, walnuts and flax seeds into a high speed blender or food processor. Blend to flour-like consistency then add to a large bowl
In the same bowl add in brown rice flour, salt and chopped jujubes (dried red dates)
In a separate small bowl, add the coconut oil, maple syrup and egg. Mix until well combined
Add the wet mixture into the dry mixture bowl and stir until evenly mixed
Shape into small 1 inch balls and place on a baking tray with enough space around each cookie
Bake for 10 minutes.
Let cookies cool and serve
