The perfect way to start your morning, or a wonderful light snack. This smoothie bowl is delicious and nutritious.
Ingredients
1/2 cup
Spinach
1 medium
Banana (s)
1 cup
Coconut milk, reduced fat
(or yogurt of choice)
1 cup
Blackberries
2 tsp
Chia seeds, ground
1 tsp
Pumpkin seeds (pepitas)
1/4 cup
Coconut flakes, unsweetened
Instructions
Add spinach, banana, and coconut milk (or yogurt) to a blender and blend until smooth, and thoroughly combined.
Add your blackberries (setting aside a few for garnish) to the blender and pulse two or three times to incorporate, leaving a bit of consistency to the mixture.
Distribute a serving of the smoothie mixture into a bowl. Garnish with fresh blackberries, top with chia and pumpkin seeds, and sprinkle with coconut flakes.
Serve immediately, or refrigerate the smoothie mixture and place toppings in a separate container to serve the next day. Keep in mind to give the smoothie mixture a good stir before serving the folllowing day.

Quick Tips:
Prep your fruits and veggies ahead of time, portion them into small containers and store them in your freezer. Not only does this allow for quick smoothie prep, but the frozen ingredients create a creamier texture.
Add any other smoothie garnish that you like: cacao nibs, puffed rice, nut butter, mint, etc.
