Ingredients

1/2 cup Flaxseed meal (ground) (or grind 1/2 cup whole flaxseed)
1 1/2 cup Walnuts
3/4 cup Cocoa powder, unsweetened (or dark chocolate chips)
1/2 cup Coconut flakes, unsweetened
1 cup Raisins, seedless (sultana) (or other dried fruit)
1/3 cup Almond butter

Instructions

  1. Using a food processor grind whole flaxseeds if not using pre-ground flax.
  2. Add walnuts and pulse to grind.
  3. Add cocoa powder and dry coconut flakes, pulse to mix.
  4. Add raisins or other dried fruit and pulse to blend until mixture clumps together. Add more dried fruit if the mixture does not clump.
  5. Add nut butter and pulse until well mixed. Mixture should form easily into bite sized balls and should not crumble apart. If it crumbles, add more nut butter. Taste and add additional cocoa powder if desired.
  6. Form mixture into balls and roll in extra coconut flakes if desired. Makes approximately 24.
