1/2 tbsp | Baking powder |
1/4 cup | Flaxseed meal (ground) |
1 medium egg | Egg white |
2 tbsp | Frozen blueberries |
1 tbsp | Maple syrup |
1/2 tsp | Cinnamon |
1/2 tsp | Orange peel (zest) |
1. Mix dry ingredients together thoroughly, and then add egg white, syrup and zest.
2. Pour into oversized coffee cup that you have sprayed (such as organic coconut oil spray) and put in microwave for 90 seconds.
3. This will make a tall muffin. If you prefer a flatter muffin (more like a muffin top) use a small, shallow cereal bowl.
4. Top with a little maple syrup if desired, and butter. For a really decadent version put a tablespoon of melted butter into the batter before cooking. E
