Super quick and delicious muffin magic!
Ingredients
1/2 tbsp

Baking powder

1/2 tsp

Nutmeg, ground
|
1/4 cup
|
Flaxseed meal (ground)
|
1 medium egg
|
Egg white
|
1 tsp
|
Maple syrup
(sugar free ED Smith)
|
1/2 tsp
|
Orange peel (zest)
|
2 tbsp

Frozen blueberries

Instructions
- Mix baking powder, nutmeg, and flaxseed meal together thoroughly.
- Add egg white, maple syrup, and zest.
- Pour into an oversized coffee cup that you have sprayed with oil (such as organic coconut oil spray) and put it in the microwave for 90 seconds.
- This will make a tall muffin. If you prefer a flatter muffin (more like a muffin top) use a small, shallow cereal bowl.
- Top with a little maple syrup if desired.
