This is a tortilla-shaped egg wrapped around omelet ingredients, making it portable. It can be made ahead of time and reheated.
Ingredients

Egg

1 tbsp
Heavy cream, 38% M.F.
(wrap)
1 tsp
Butter, unsalted
1 medium slice
Bacon
(cut into small pieces)
1/4 cup chopped
Sweet onion
1/4 cup chopped
Red bell pepper
1/4 cup, shredded
Cheddar cheese, sharp
1/2 cup
Baby spinach
Instructions
Heat a medium-sized frying pan (8-10 inches) and melt the butter.
In a bowl combine egg, cream and salt and pepper.
Put egg mixture in pan and swirl pan to spread egg to edges of pan.
Cook until firm enough to flip over in pan. When finished, move to a plate.
Cook bacon in pan, then add onion and pepper. Cook until soft.
Place veggies, bacon, spinach and cheese on tortilla and wrap like a burrito.
Eat now or allow to cool and then wrap in parchment.
Freeze to use later (take out of freezer and place in fridge the night before you need it) or refrigerate until morning.
Reheat in microwave or 350 degree oven, in parchment, for 10 minutes.
Notes:
Meal Prep: make several and freeze individually in parchment and plastic wrap. Remove from freezer the night before eating if possible and warm in oven or microwave.
Use whatever meat and veggies you like.
Ground beef with taco seasoning and salsa...chicken, avocado and spinach.
If eating right away, try bacon, lettuce and tomato.
