Breakfast Wrap with Low Carb Tortilla

Ingredients


1 tsp Olive Oil, Extra Virgin
1 medium slice Bacon (chopped)
1 large Egg (lightly whisked, with cream)
1 tbsp Heavy cream, 38% M.F.
1 cup Baby spinach
1/4 cup, shredded Cheddar cheese, sharp

Instructions


  1. Heat oil in pan.
  2. Add bacon and cook for a couple of minutes.
  3. Add onion and cook until soft. 
  4. Add egg/cream mixture and stir until combined and cooked.
  5. Season with salt and pepper and other spices as desired (onion powder, garlic).
  6. Place egg mixture, spinach and cheese on large Low Carb Wrap* and fold like a burrito.
  7. Eat now or allow to cool and then wrap in parchment.
  8. Freeze to use later (take out of freezer and place in fridge the night before you need it) or refrigerate until morning.
  9. Reheat in microwave or 350 degree oven, in parchment, for 10 minutes (or 20-25 from frozen).

Notes:

Note that the nutrition information doesn't include the wrap since it depends on what kind you use.

*I like La Tortilla Factory High Fibre wraps. They only have 6 grams net carbs in the large tortilla and 3 grams in the smaller one.

If you use the large tortilla, this breakfast wrap has 7.5 grams of net carbs!

Feel free to use different vegetables, but it may affect the carb content.
