681 gm Pork Belly Joint, Waitrose
1 tsp Ghee (melted)
1 tbsp Cajun seasoning
1 tsp Salt and pepper
567 gm Cauliflower
43 gm Butter, grass fed, unsalted
1/2 tsp Cayenne pepper
1/2 tsp Himalayan sea salt
397 gm Spinach
1 tbsp Butter, grass fed, unsalted

Instructions


  1. Remove pork belly joint from packaging and pat dry
  2. Preheat the oven to 200°C (400°F)
  3. Mix the ghee with the cajun seasoning, salt and pepper and rub well into the pork belly, rubbing into the score marks on the skin
  4. Place the pork skin side up onto a baking tray
  5. Place in centre of oven and roast for 20 minutes then reduce the temperature to 180°C (350°F) and continue roasting for another 15-20 minutes reaching a core temperature of minimum 75°C (170°F)
  6. Remember to baste the pork a couple of times throughout the cooking process
  7. Break the head of cauliflower into florets and place in a microwavable bowl with the butter.
  8. Microwave on high for 10-12 minutes. Make sure to keep re-coating the cauliflower in the butter.
  9. Once finished, pop into a high-powered food processor with the salt and cayenne pepper. Process until smooth and no lumps.
  10. Meanwhile, for the spinach melt the butter in a medium pan and add the spinach, stir until wilted.
  11. Carve the pork belly and serve up on a bed of creamy mash with buttery spinach
