397 gm Cauliflower crumbles/rice
29 gm Butter, grass fed, unsalted (or ghee)
2 tbsp Heavy cream, 38% M.F. (or olive oil)
1 tbsp Ghee
86 gm Red onion
1 tsp Thyme, fresh
1 tsp Sage, fresh
2 cup Bone broth, Organic
2 clove(s) Garlic
1 tsp Onion powder
1 tbsp Apple cider vinegar
1/2 tsp Xantham Gum
199 gm Bacon
397 gm Beef liver
1 tsp Rosemary, fresh
1 tsp Salt and pepper

GO! :: Instructions

  1. For The Cauli Mash: add the cauliflower to a microwaveable bowl with the butter and microwave on high for 12 minutes. Stirring mid-way through.
  2. For The Onion Gravy: peel and slice the red onion. Heat the coconut oil in the medium saucepan and add the onion, sauté until softened.
  3. Chop the fresh thyme and sage and stir into the onions.
  4. Pour in the bone broth and bring to a boil and reduce to a simmer. 
  5. Using a garlic press add in the garlic, along with the onion powder, apple cider vinegar, xanthan gum and whisk together to thicken. Simmer on low while you cook the liver.
  6. For The Liver: chop the bacon and fry in a large skillet.
  7. Season the slices of liver with salt and pepper and add to the skillet, fry on one side for 3 minutes. 
  8. Chop the rosemary leaves and add to the skillet then turn the liver and fry for 2 minutes.
  9. Cauli Mash Cont: to your food processor add the cauliflower with the heavy cream, salt and pepper and whiz into a mash consistency.
  10. To Serve: divide the Cauli Mash across 4 dishes and top with the liver bacon & onion gravy. Enjoy!

Notes:

Try cauliflower mash with olive oil for dairy-free
