In electric mixer, beat butter and sugar until light and fluffy.
Add eggs and vanilla and beat until combined.
Add flour, salt (if you used unsalted butter) and baking powder and beat until smooth.
Place dough in the fridge for 10 minutes (this makes it easier to roll and transfer onto baking sheets).
Roll out dough and use cookie cutters to cut out desired shapes.
Place on cookie sheets and bake in a 350 degree oven for 10 minutes.
Decorating the Cookies:
For these Canada Day cookies, store bought fondant was purchased, rolled out and cut out with the same cookie cutter that was used for the cookies. To help the fondant stick, simply make an edible “paste” with water and icing sugar and brush it on the top of the cookie before placing the fondant.
Tip:
Use icing sugar to cover your working surface when rolling out the dough. This prevents sticking and doesn’t make the cookies tough like flour can if you add too much.
