This light, sweet and refreshing salad makes the perfect side dish or add your favourite protein to make it a meal.

(Dressing; Caribbean style; adjust to taste)

(or more to taste)

(minced)

Red wine vinegar
(or lemon juice)

Jalapeno pepper
(minced, or more to taste)

Extra virgin olive oil

Napa cabbage, raw
(cored and shredded; or other cabbage variety)
1 mango
Mango
(large ripe; peeled, sliced or Julienne)

Carrots
(shredded)
3 green onion (stem)
Green onion

Parsley, fresh

Almonds, raw
(or sun flower seeds)
Instructions
Prepare the dressing by combining the following ingredients into a jar or bowl: honey, hot sauce, mustard, white pepper, garlic, vinegar (or lemon juice), Jalapeño pepper, and olive oil. Shake to emulsify for about 2 minutes. Set aside.
Add cabbage, carrots, scallions, and mango to a bowl.
Shake the jar of dressing and add it to the salad. Toss to coat right before serving. Top with parsley and almonds.
