Caribbean Grilled Pork with Tropical Salsa [BR]

Ingredients


1/2 fruit Pineapple (peeled, cored, diced, for salsa)
1 medium Orange (peeled, diced, for salsa)
1 tbsp Cilantro (coriander) (minced, for salsa)
1/2 whole lime(s) Lime juice (fresh) (for salsa)
1 tsp Garlic (for meat)
1 tsp minced Ginger root (for meat)
1 tsp Cumin (for meat)
1 tsp Coriander, ground (for meat)
1/4 tsp Turmeric, ground (for meat)
2 tbsp Olive Oil, Extra Virgin (for meat, as needed)
300 gm Pork, sirloin (boneless) (2 x 150gm pork sirloins or chops)

Instructions


  1. Make your salsa by combining the chopped pineapple, diced orange, minced cilantro and lime juice into a small mixing bowl. Set aside. This can be prepped up to 2 days in advance and refrigerated.
  2. Next, make your rub for the pork chops by combining garlic, ginger, cumin, coriander and turmeric into a small bowl, mixing thoroughly with your fork, and then set aside.
  3. Preheat barbecue to medium-high, and brush both sides of pork chops with olive oil and apply the rub to both sides. Use your fingers to rub this in until your pork is fully covered with spice rub.
  4. Place your pork chops on the grill for about 5 minutes per side, or until cooked to the required doneness.
  5. Serve each chop accompanied with 1/3 cup (75 mL) salsa. Serve immediately.
