Instructions
Make your salsa by combining the chopped pineapple, diced orange, minced cilantro and lime juice into a small mixing bowl. Set aside. This can be prepped up to 2 days in advance and refrigerated.
Next, make your rub for the pork chops by combining garlic, ginger, cumin, coriander and turmeric into a small bowl, mixing thoroughly with your fork, and then set aside.
Preheat barbecue to medium-high, and brush both sides of pork chops with olive oil and apply the rub to both sides. Use your fingers to rub this in until your pork is fully covered with spice rub.
Place your pork chops on the grill for about 5 minutes per side, or until cooked to the required doneness.
Serve each chop accompanied with 1/3 cup (75 mL) salsa. Serve immediately.
