Ingredients
1 cup
Chicken breast, roasted
(chopped)
1/2 cup
Celery
(diced)
1/2 cup
Green bell pepper
(chopped)
1/4 cup
Red onion
(diced)
1 cup
Red grape
(sliced)
1/3 cup
Mayonnaise, with olive oil
2 slice
Whole wheat bread
(or bread of choice)
1 leaf
Lettuce, romaine
(or greens of choice)
Instructions
Toss together chicken, celery, green pepper, and onion.
Add sliced grapes and mayonnaise. Mix gently.
Spread the chicken salad mixture over 1 slice of bread.
Add greens and place the other slice of bread on top to serve.
Notes:
Quick Tip:
For a finer texture, omit the lettuce and add all of the ingredients, except the bread into a food processor and process until the desired consistency is reached.
Serving suggestions: spread the mixture onto your favorite bread, stuff it into a pita, roll it into a tortilla, or scoop it with crackers.
