This ranch chicken quinoa salad is quick, easy, and healthy. It uses rotisserie or leftover chicken to make it even faster!

Ingredients


1 cup Quinoa, uncooked (uncooked)
1 cup Chicken breast, boneless, skinless (you can also use rotisserie)
1/4 small Red onion (chopped)
142 gm Baby spinach
1/2 cucumber(s) Cucumber (sliced)
1 avocado(s) Avocado (sliced)
1/2 medium pepper(s) Red bell pepper ((chopped))
1 dash Salt (to taste)
1/2 tbsp Parsley, dried (fresh or dried)

Instructions


  1. Cook your quinoa according to package directions. If making the ranch dressing, make it while the quinoa is cooking/cooling.
  2. Meanwhile, prep your other ingredients. Feel free to use what you have on-hand and to adjust quantities as needed to suit your personal tastes. 
  3. Once the quinoa has cooled, assemble the salad and toss with the dressing.
