Chicken Teriyaki Stir Fry with Bok Choy

426 gm Chicken breast, boneless, skinless
1 1/4 cup diced Pineapple (fresh or canned)
1/2 cup Teriyaki sauce
3/4 tsp Sesame oil
1 cup chopped Red bell pepper
1 cup chopped Carrots
1 cup slices Zucchini
2 cup Bok choy (chopped)
1 can(s) (8oz) Water chestnuts, canned
1 1/2 cup Jasmine rice, dry

Instructions


  1. Cook rice until tender. While rice is cooking prep the stir fry. 
  2. Sautee chicken with vegetables in sesame oil.
  3. When tender add the pineapple and teriyaki.
  4. Mix until chicken and veggies are coated in sauce. 
  5. Serve with a side of rice.
