1 1/4 kg Chicken thighs, boneless, skinless
7 cup Green/yellow string beans, raw
2 cup diced Pineapple
2 tbsp Cilantro (coriander) (chopped)
2 tbsp Red onion
2 tbsp Red bell pepper (finely chopped)
1 medium pepper(s) Jalapeno pepper (seeded and finely chopped)
2 tbsp Lime juice (fresh)
1 tsp Extra virgin olive oil
1/2 tsp Sea Salt

Instructions


  1. Grill or saute chicken. Steam fresh or frozen green beans. Season chicken how you like.
  2. Salsa - Mix all ingredients in a bowl and serve on top of chicken.
