2 cup Pasta, penne, whole wheat, dry
1 tbsp Extra virgin olive oil
2 clove(s) Garlic (minced)
1/4 tsp Crushed red pepper (flakes)
1/2 bunch Kale (destemmed and roughly chopped)
1/4 cup Water
1 tbsp Goat cheese, soft
1 can (15oz) Chickpeas, canned, drained (rinsed and drained)
1/3 cup Basil pesto

Instructions


  1. Add the pasta to the pot of boiling water. Cook according to package instructions. Reserving 1/4 cup of the pasta cooking water, drain thoroughly, and rinse under cold water to prevent sticking.
  2. Meanwhile, in a large non-stick pan warm olive oil over medium-high. Add the chopped garlic and as many red pepper flakes as you’d like, depending on how spicy you’d like the dish to be. Cook, stirring frequently, for 30 seconds to 1 minute, or until slightly softened.
  3. Add the chopped kale to the pan and cook, stirring occasionally, for 2 to 3 minutes, or until slightly wilted. Pour in the water (not the reserved pasta water) and cook, stirring occasionally, for 2 to 3 minutes, or until the kale is completely wilted and the water has cooked off.  
  4. To the pan of cooked kale, add the cooked pasta, goat cheese, and half the reserved pasta cooking water. Cook on medium-high, stirring constantly, for 1 to 2 minutes, or until the cheese is melted and the pasta is coated. Turn off the heat. 
  5. Add the pesto and stir to combine (if necessary, gradually add the remaining pasta water to ensure the pasta is thoroughly coated and desired consistency is reached).
