Chickpea Scramble

This quick and simple Chickpea Scramble is loaded with flavor and vegan-friendly!

Ingredients


1/2 tbsp Extra virgin olive oil (or cooking oil of choice)
1 can (15oz) Chickpeas, canned, low sodium (drained; save some chickpea water for cooking)
1 tbsp Nutritional yeast
1 tsp Paprika (smoked or sweet)
1 tsp Turmeric, powder
1/3 cup Mayonnaise, vegan
1 tbsp Sriracha (or more if you like it spicy)
1 tsp Soy sauce, low sodium
1/2 avocado(s) Avocado (diced)
2 cup Arugula (or leafy greens of choice)
1 cup Cherry Tomatoes (halved)

Instructions


  1. Drain the chickpeas, reserving some chickpea water (aquafaba) - about 1-2 tablespoons, then rinse to rid of any excess sodium. 
  2. Transfer the chickpeas to a bowl and mash lightly with a fork, keeping some chickpeas partly mashed for texture.
  3. Warm oil in a non-stick pan over medium heat. Add the mashed chickpeas, nutritional yeast, paprika, and turmeric and stir to coat with the oil.
  4. Add 1 tbsp of chickpea water if you start to notice the spices burning to the bottom of the pan. Continue to add more chickpea water as needed.
  5. Cook for 2 to 3 minutes until warm and all spices are mixed with chickpeas. 
  6. Meanwhile, prepare the spicy mayo. Combine the vegan mayonnaise, sriracha, and soy sauce in a small bowl.
  7. To serve, add the chickpea mixture to a bowl, top with avocado, arugula, and tomatoes, and finish with a dollop of spicy mayo.
