Add all remaining ingredients to the soaked seeds.
Add 1 tbsp filtered water (you can always add more later), then use an immersion blender or Nutrabullet to blend until the mixture reaches the desired consistency (adding more water if necessary).
Consistency can range from a liquid to a pudding texture, depending on how much water you add.
Place in a serving bowl and sprinkle with extra chia seeds.
