These Chocolate Peppermint Balls are addictively delicious and with no grains, dairy, or refined sugar, they’re a snack you can enjoy guilt-free!

Ingredients


1 cup Walnuts
1 cup Dates (pitted)
1/3 cup Cacao powder, raw
2/3 cup Coconut, shredded
1 tbsp Almond milk, unsweetened (or coconut; or your favorite dairy-free option)
1 1/2 tsp Peppermint extract (or less; to taste)
1/4 cup Coconut, shredded (for coating)

Instructions


Step 1: Add walnuts to a food processor or blender and pulse until well chopped.

Step 2: Add pitted dates and pulse again until mixed well.

Step 3: Add the cacao powder, shredded coconut, peppermint extract, and almond milk. Pulse until combined. 

  • Add 1 more tbsp of milk, if needed (you should be able to roll into balls easily). 
  • Add a little more peppermint extract if you want an extra minty flavor.

Step 4: Scrape the batter out of the food processor or blender into a medium-sized bowl with a spatula and add remaining shredded coconut to a separate small plate or bowl. 

Step 5: Form batter into 1″ balls, then roll each ball in the plate/bowl of shredded coconut to coat.

Step 6: Place balls into an airtight container and keep refrigerated.
