Step 1: Add walnuts to a food processor or blender and pulse until well chopped.
Step 2: Add pitted dates and pulse again until mixed well.
Step 3: Add the cacao powder, shredded coconut, peppermint extract, and almond milk. Pulse until combined.
Step 4: Scrape the batter out of the food processor or blender into a medium-sized bowl with a spatula and add remaining shredded coconut to a separate small plate or bowl.
Step 5: Form batter into 1″ balls, then roll each ball in the plate/bowl of shredded coconut to coat.
Step 6: Place balls into an airtight container and keep refrigerated.
