Ingredients


1 tsp Ghee
57 gm Zucchini
57 gm White mushrooms (chopped)
86 gm Sausage, chorizo, pork and beef (chopped)
114 gm Waitrose Smoked Bacon (streaky)
1 tsp Paprika, smoked
1 tsp Hot pepper (chili) flakes ((optional))
114 gm Spinach (tightly packed)
4 large Egg (free-range)
1 tsp Salt and pepper (season to taste)
57 gm Avocado (medium; sliced, chopped or smashed)

Instructions


  1. Add the ghee to a medium sized non-stick skillet with the zucchini and mushrooms and cook through two minutes until softened slightly
  2. Add the chorizo and bacon and continue to cook until bacon is cooked through
  3. Stir in the paprika, chilli flakes (if using) salt and pepper then add the spinach and keep stirring allowing the spinach to wilt
  4. In a bowl, whisk the eggs together
  5. Pour the egg mixture into the skillet and cover creating the omelette
  6. Pre-heat the grill to high 
  7. Allow the omelette to cook on the hob on a low to medium heat for 3-5 minutes, until the majority of the egg looks cooked, be careful not to burn the bottom of the omelette
  8. Then place the omelette under the grill for 1 minute to cook the top, be careful with the handle of the skillet under the grill
  9. Smash the avocado, add the olive oil and optional chilli flakes then serve up half of the omelette with half of the smashed avo
