125 gm Chicken breast, boneless, skinless
1 tsp Extra virgin olive oil
1/2 whole lime(s) Lime juice (fresh) (juice + zest))
1 pinch Salt
1/2 tsp Garlic powder
1/4 tsp Cane sugar
2 2/3 tbsp Cilantro (coriander)
1/4 tbsp Extra virgin olive oil
100 gm Brown rice, medium-grain, cooked (any rice of your choice)
1/4 cup Pinto beans, canned (or veggies of choice)
1/8 small Red onion (diced)
30 gm Sweet corn, canned, drained
1/4 avocado(s) Avocado

Instructions


  1. In a large bowl or Ziploc bag, add the chicken, olive oil, lime zest, lime juice, salt, garlic powder, sugar, and cilantro. Toss well to combine until all the chicken is coated. Set aside to marinate for 30 minutes.
  2. On medium heat, heat up your skillet (preferably cast iron) with olive oil before adding in the chicken, smooth side down and then cook for 5 minutes. Flip and continue to cook for 6 to 7 minutes, or until cooked through. Do not overcrowd the pan, cook in two batches if necessary. Be sure to add more oil for the second batch.
  3. When done, assemble the bowls by combining the cilantro lime chicken with the rice, pinto beans, red onions, corn, and half (or one) avocado. Top off with a wedge of lime.
